
As I have said before, food gifts are my favorite. My favorite to give and receive. Life is busy when you are young, middle aged or somewhere in-between. Getting kids to and from school and after-school activities, taking care of your parents sometimes and so on and so forth. Then when we get older, we have a hard time taking care of our own self. In all stages of life, the gift of food is always welcome for one reason or another. Either for financial relief or the task itself.
So! let’s get to cooking! Today I am going to share a super simple and delicious meal idea. Roasted chicken and veggies. This meal will fit into all dietary restrictions. Thier is no gluten or diary in this. You can keep the salt minimal if that is a concern for the recipient. Keep in mind most seasoning blends have salt in them so either don’t add extra or don’t use the blend so you can let the person receiving the gift decide how much to use.

Equipment
- 1 sheet pan you may also freeze this in a casserole dish or smaller containers for giving
Ingredients
- 5 chicken thighs
- 1 bag small red or yellow potatoes
- 1 bag baby carrots
- 3-4 tbsp olive oil
- 1-2 tbsp poultry seasoning you may use any seasoning you like for chicken
- 1/8 tsp salt and pepper omit this if you are using a seasoning blend that already has salt and pepper in it.
Instructions
- preheat oven 350 degrees
- place chicken in casserole dish or sheet pan
- Add vegetables, cover with olive oil and seasoning
- bake for one hour or until the meat at the bone has reached 175 degrees and then add 10 more minutes. make sure the juices are clear
- if freezing skip baking and place in a freezer-safe bag or container. Thaw before cooking.
