Tomato Feta Bake

This dish has so much flavor for such little effort. That’s a win/win in my house! A bonus, it’s so easy to make and super affordable.

Tomato Feta Bake

Easy Tomato Feta bake is creamy and delicious. Serve on it's own as a dip. Add pasta for a side or add chicken to make a main course.

  • 13×9 baking dish
  • 400 degree oven

Ingredients
  

  • 2 pints grape tomatoes
  • 2 tbsp minced garlic
  • a drizzle olive oil
  • 1 block feta cheese
  • 1 box pasta ziti or penne works best
  • sprinkle Italian seasoning
  • dash salt and pepper

Instructions
 

  • This recipe is the easiest thing I have ever made and probably the tastiest. I love feta cheese though. I saw this like most people on Pinterest and have been making it weekly almost ever since. I don't really measure I just took the concept and winged it. Turns out awesome every time.
    Instructions
    You will need a 13×9 baking dish. Pre-heat oven to 400 degrees. place washed grape tomatoes into the bottom of the baking pan. Add all of the ingredients except oil and feta cheese. Drizzle liberally with the olive oil and toss to coat the tomatoes with all of the seasoning. Place feta cheese block in the center and flip to coat with the oil. bake for 20 minutes or until the cheese is soft and tomatoes are busting and getting wrinkled.
    Prepare pasta and if you are making it a main dish, cook the chicken. Once the tomatoes and cheese are ready remove from the oven. Take a large spoon or spatula and smear cheese all around coating all of the tomatoes. once you have a nice sauce add in your pasta. You may add chicken at this point if you like. Serve immediately!

 This is my recipe dump on the blog. Sometimes we knock dinner out of the park! Other times we are just trying to get everyone fed. Do not for one second think that all moms have this meal planning thing panned out and never screw up and have nothing to feed their family. Simply not true. There are times when all of us are stuck with out a plan or anything to serve that seems appetizing. You just have to keep going, give yourself some grace and move on to the next meal. In this section of the blog I will have some quick and easy meals as well as some that may take a little bit more prep.
