These are a few of my go-to options for quick healthy breakfasts. Just a quick PSA, I am not on the low carb band wagon. I love carbs and live with the “everything in moderation” motto.
English muffins 3 ways-
I use the 100 calorie whole wheat English muffins. Toast it in the toaster or toaster oven if you have it. If you are gluten free there are tons of bread options, it just depends on what your grocery store has. Mine has gluten free bread in the freezer section.

Option 1
- one egg
- 1-2 slices of ham
- small amount of cheese
I have a ceramic egg cooker for the microwave, but you can use any coffee mug. I do 30 seconds, stir add cheese and do another 30 seconds. add salt and pepper once it’s cooked. Top your muffin with egg ham and cheese. Wrap with foil and head out the door!

Option 2
- Peanut butter or any nut butter
Honestly this is my go-to. Mostly because I’m running late and don’t have time for an egg. I prefer option one though.

Option 3
- soft avocado
- everything beagle seasoning
- egg (optional)
- microwaved turkey bacon or regular bacon (optional as well)
Prepare the egg the same way as above. Toast muffin. Spread avocado on english muffin. Sprinkle with everything beagle. Top with egg if using one.
