Easy week night or freezer friendly chicken pot pie

This is a crowd pleaser in my house. The best part is it takes little time. If you plan ahead it takes even less time. I cut corners with this one by using the ninja foodie and pre-made dough. Here is a list of the ingredients I used. I am a firm believer in using what you have on hand so feel free to vary the recipe depending on what you have. For example, if you do not have corn but have peas, use peas. If you have a pie crust in the fridge? By all means use it. Do not go out and buy a can of biscuit dough.

    Ingredients

  •  3 frozen chicken breasts
  • 1 large carrot or 8 baby carrots chopped
  • 2 stalks of celery chopped
  • 1 med/large onion chopped
  • 2 or 3 potato’s (optional)
  • 32 oz carton chicken stock or broth
  • onion powder, salt, pepper, poultry seasoning to taste. I start with 1/4 tsp. each
  • 1 sheet of crescent roll dough or pie crust.
  • 2 TBS flour
  • 1/2 cup liquid ie, half and half, water or stock. I prefer whole milk or half and half

Step 1.

Put frozen chicken, stock and veggies in the pressure cooker on high for 10 minutes. If you watch my reels on Instagram, I did this in 2 steps. I was in a hurry to get things going so I threw the chicken in first and let that cook while I was chopping the veggies. Either way is fine.

Step 2.

Take the chicken out of the pot and shred the chicken.  Turn the pressure cooker (I am using the ninja foodie) to sauté mode. Once the chicken has cooked, if you haven’t added the veggies yet. Now is the time to do that. Add 2 TBS butter and sauté veggies until soft. Mix 2 TBS flour and 1/2 cup half and half, water or stock to make a slurry. Pour it into pressure cooker on sauté mode until it starts to thicken.

Step 3.

Pour contents in a 13x 9 casserole dish. The dish linked here * has a lid and is freezer safe. Top the casserole with dough. If you are meal prepping you can top it with aluminum foil or the lid it comes with, and place it in the fridge or freezer. If you are ready to cook it right away, you can place your dough on top and follow package directions.

Step 4.

When you are ready to cook place the cold casserole dish in a cold oven. This is done because sometimes a glass dish will break if it is heated up too quickly. If you’re not using glass do not worry about this step. Set oven to whatever the package directions say for the dough and bake until golden brown and filling is warm and bubbling. Crescent roll dough was 350 degrees. It says for 14-18 minutes but because the dough and/or casserole is frozen it will take 30-40 minutes.

Step 5.

Enjoy! I love to serve this over rice. The pressure cooker makes the best rice. A side salad is also great with this. I hope you try the recipe and like it.
